Smashed chickpea sandwich

Packed with protien and goodness, these take no time to make and are also easy on the wallet.

1 can organic chickpeas -rinsed and drained
1/2 red onion diced
1 TBSPN extra virgin cold pressed olive oil
1/2 tspn ground tumeric
1 TBSPN whole egg mayonaise
Salt and pepper to taste.

Method:
Place all ingredients in a bowl and mash with a potato masher.
Season to taste with salt and pepper.
Assemble on bread of your choice with other salad ingreds of your choice, I like sprouts, cucumber and rocket.
