Best bran muffin

I call these ‘anytime muffins’ as they’re a great thing to grab anytime.  Packed full of fibre and nutritious wholefood ingredients, they’d even serve you well for a grab and go breakfast or a lovely afternoon snack with tea.

Ingredients:

Dry:

1/2 c wholemeal flour

1/2 c ground almonds

1 1/2 c’s wheat bran

1 &B1/2 tspn baking powder

1 tspn baking soda

2 tspn cinamon

Pinch of salt

Wet:

2 eggs

1/4 c avocado oil

2 tablespoons maple syrup

3 ripe bananas mashed

1 tspn vanilla extract

3/4 c natural yoghurt

2 apples diced

Method:

Preheat oven to 200 C. Line a medium muffin tin with 12 paper cases.

Mix all dry ingredients.  Add all wet ingredients and mix till combined.

Spoon into paper cases and bake 25 mins, or till a knife comes out clean.  Enjoy the deliciousness
