These are a great take on the kids favourite, but unlike the takeaway version, these are packed full of goodness and a cinch to make. I tend to prep them ahead and then cook them that evening (and if you have an air fryer they will be ready in next to no time).
Ingredients:
2 chicken breasts cut into 1 inch cubes, or use chicken thigh if you prefer
1/4 cup cornflour (or plain flour, whatever you have on hand will work)
1/2 tspn ground cumin
1 tspn smoked paprika
A pinch of salt
2 eggs (whisked or mixed together)
Approx 1 1/2 cups Panko crumbs (see how you go)
Olive Oil spray
Method:
Combine flour, spices and salt, mix to combine. Coat chicken cubes in flour mixture, then transfer to egg mixture, coat, and finally transfer to panko crumbs and roll to coat. Repeat process till all chicken is coated. Spray chicken with olive oil spray ensure both sides are sprayed (this will give them a nice golden colour while cooking). In an airfryer, set the temp to 180 and cook approx 10-12 mins, shaking halfway through. Times may vary depending on your air fryer, so check chicken is cooked all the way through before serving.
